Chargrill Charlie’s Golden Quinoa Salad
SERVES 4 | Vegan friendly
500g Red Quinoa Cooked & Cooled
1 Diced Red Capsicums
½ Diced Red Onions
¼ Dill (Finely Chopped)
½ Mint (Finely Chopped)
1 Handful of Dried Cranberries
1 Handful of Roasted Slithered Almonds
½ Parsleys (Finely Chopped)
1 Tbl Spoon Turmeric
1 Tbl Spoons Cumin
100mL Extra Virgin Olive Oil
50mL apple cider vinegar
- Heat red quinoa until cooked in boiling water. Drain from water and rest until cooled.
- In a small bowl combine extra virgin olive oil, 4 squeezed lemons, salt, pepper and apple cider vinegar
- In a large bowl combine cooked red quinoa, diced capsicum and onion, finely chopped dill, mint and parsley, chickpeas, roasted slithered almonds, turmeric and cumin.
- Add dressing (as desired) to the bowl and toss together.
