Spring has sprung and with the temps slowly but surely heating up, there’s nothing we love more than a fresh salad come lunch time!
And when it comes to sprucing up our salads, we can’t go past this delicious avocado, lime and coriander green goddess dressing by Australian Avocados.
Packed with heart-healthy fats, Vitamin C and E, fibre and antioxidants, it only takes ten minutes to make and is perfect for remixing your salad game (and makes a pretty delish spread on toast!):
Makes 2 cups of dressing
Prep: 10 mins, blender required
1 ripe avocado
1/2 cup fresh coriander leaves
1/4 cup parsley leaves
1/4 cup fresh lime juice
1/2 cup water, plus more if required (See tips for alternate options)
1/4 cup olive oil
1/4 cup raw walnuts or cashews (See Tips for alternate options)
1 clove garlic, crushed
1/4 tsp sea salt
1/4 tsp black pepper
1. Remove seed from avocado and scoop flesh into a blender. Discard seed and skin.
2. Add all remaining ingredients to the blender and pulse until very smooth. Add more water if desired for a thinner consistency.
3. Serve over salads, roasted veggies, and rice dishes or even us as a spread for sandwiches.
